The farms that come together to produce this local coffee are all located between 1300 and 1700 meters above sea level. They are selected according to the quality of their coffee. Top quality is ensured by the selection of cherries from the middle of the harvest. This coffee is then prepared in a cooperative that centralizes all the preparation processes.
