The artisanal vinegar factory Les Enfants de Bacchus is located in Hautvillers, an emblematic village in the region and the birthplace of Champagne. This place is the realization of an original idea of four brothers and sisters who grew up in this charming village, rue de Bacchus.
They each have very different jobs today, but they wanted to come together around a project that highlights the richness of the Champagne terroir.
Their leitmotif? Antoine Lavoisier's quote: "Nothing is lost, nothing is created, everything is transformed."".
Aware and concerned about the ecological challenges of recent times, they had a suitable raw material at their disposal: declassified wines, also known as quota surpluses. They decided to revalue them by transforming them into exceptional vinegars!
A few words about vinegars: the world-famous grapes are processed in Hautvillers! The transformation method used is the dynamic method, which is much less energy-intensive than the traditional method. This artisanal and local production produces vinegars that embody the diversity and quality of the Champagne region.
