An exceptional dessert, served for special occasions, this spit cake is one of the specialties of the Pyrenees, brought back to France from the Caucasus by the armies of Napoleon. A buttery liquid batter, the consistency of pancake batter, is poured onto a conical-shaped spit that rotates above a heat source. It cooks slowly before adding a second and then a third layer. An original cake that delights the palate with its fine taste of fresh butter, vanilla and rum.
