The particularity is that I replace part of the sugar with spring flower honey at the end of cooking (5% exactly), which will not leave a strong honey taste but it plays a role of natural flavor enhancer and therefore reinforces the aroma of the fruit: it is also for this reason that we do not combine several fruits in our recipes.
