Dominique Piron - Les Cadoles - Red - 2021: In order to obtain light and fine tannins, the “Les Cadoles de la Chanaise” vintage is produced like a white wine, that is to say with very short maceration. To benefit from all its fruity intensity, this wine should ideally be enjoyed within two years and before its fourth year. The vineyard is based on very varied soils, clay-limestone in the south, granite or alluvium in the north.
