This creation started with a crush on Timur Bay, or Timut, growing wild in Nepal on the Himalayan foothills. It is a berry that has a fresh, zesty facet naturally typified by pink grapefruit. I wanted to create a very thirst-quenching drink with this dominant pomelo that I accentuated by mixing rose petals, and to give it body and a warm touch very gently, I used a white tea with large leaves from the Family of White Peonies (or Bai Mu Dan) sourced in Vietnam.
