Mostarda is a traditional Italian "agrodulce" (sweet and sour) condiment, most famously produced in Cremona, in the Lombardy region of Northern Italy. Vergani makes their Mostarda from peaches, pears, clementines, papaya, kiwi, and preserves these in syrup with the essential mustard essence. Traditionally paired with braised, boiled or cured meats and fresh or aged cheeses.
