Montespada Amarone della Valpolicella 75cl Vintage 2018

Full bodied with sensory hints to the nose and the palate of fully ripe fruits, Sour Black Cherries, Red Cherries, and at the end of this sensory experience come the hint of bitter chocolate. Features: The grapes are dried at a controlled temperature for 3 months to reduce their weight by 40%. After being gently crushed, a slow fermentation process in Steel Tanks commences. 2/3 of the wine is matured in large Oak barrels for about two years and a third is matured for 18 months in barrels. This process is followed by a final refinement in bottles for at least 6 months before being put on sale. Vineyards of origin: Terraced vineyards facing south, in the Valpolicella Classica area. Harvest: Grapes are strictly harvested manually in late October and placed in small boxes to avoid the grapes being damaged. Soil: Dark loamy soil mingled with mixed with pebbles from disintegrating rocks, with an almost neutral pH level Aging / Perfecting: The Amarone della Valpolicella is achieved after fermentation process, and separation of the wine fromheavy lees. It is then left to mature for a long time, in accordance with production specifications in Large Barrels and subjected to frequent, but gentle Batonnage and stirring for a few months, to enhance the extraction of primary and secondary fragrances. It is subsequently bottled and left to age for at least 12 months before being put on sale, within the terms set out by the product specifications of the Amarone Classico. This strong wine of an imposing structure and a high alcohol content make it a perfectly suitable candidate for aging for many years after production, and whose complexity will improve from year to year, without the fear being damaged as a result of time.
