AD SAVA & MADAURE
The Green Gold of the Algerian Highlands
In the heart of the mountains north of Setif, where olive trees draw their strength from a preserved terroir and an exceptional high-altitude climate, AD SAVA and MADAURE olive oils are born. Born from ancestral know-how passed down from generation to generation, they embody Algerian olive oil excellence.
A history rooted in antiquity
The name AD SAVA has its origins in the Roman history of Algeria. It refers to the ancient Sava river, located in the Hammam Guergour region, in the current wilaya of Setif. Since ancient times, this fertile valley has been renowned for the richness of its land and the quality of its agricultural production.
Our brand MADAURE pays homage to the ancient Roman city of Madauros (M'Daourouch, in eastern Algeria), famous throughout the Roman Empire. HAS At that time, olive oil produced in the African provinces was exported to Rome, where it was particularly appreciated for its quality. Today we perpetuate this thousand-year-old heritage by offering authentic olive oils, sourced from the best Algerian terroirs.
The Great Varieties of Algerian Olives
Algeria possesses one of the richest olive-growing heritages in the Mediterranean basin. Our oils are made from several emblematic varieties:
Chemlal from Kabylie: the most widespread variety in Algeria, renowned for its delicate, fruity, and harmonious oils.
Sigoise (or Taksebt): originating from western Algeria, it produces generous oils with vegetal and fruity notes.
Azeradj: a traditional variety from Kabylie that produces complex and elegant oils.
Bouchouk de Guergour: an emblematic variety of the Setifian highlands, particularly adapted to mountainous areas.
Limli and Aberkane: cultivated in several regions of the country for their remarkable taste qualities.
This varietal diversity gives Algerian oils a unique aromatic richness, combining notes of fresh grass, almond, artichoke, green tomato and sometimes ripe fruit.
