This semi-cured goat cheese is handcrafted by Collados Quesería. It is extraordinary if you enjoy soft cheeses, but with an unmistakable and incomparable flavor. The process used is that of a lifetime, manually pressing through a knotted cloth, which gives it its characteristic shape. Then it has to mature in the cellar for about 45 days, to get the texture and flavor that will make you love cheese at first sight. The goats graze freely, at the foot of the Sierra de la Sagra, Granada at more than 1,700m of altitude. This is essential to achieve a unique milk of the best quality.
