Born in Pau in 1948, Francis Miot has become the most famous jam maker in France, not only because of the number of titles and awards he has received, but also thanks to his enthusiastic communication and his inimitable moustache!

An iconic figure of the Southwest, nicknamed "the Pope of Jam", he left his mark and his identity at the heart of the House which bears his name and which continues to uphold his values of authenticity, creativity and know-how.

Francis Miot has developed a very sharp talent and know-how in the preparation of jams.
He excels in the art of choosing good, tasty and fragrant fruits while ensuring a very short cooking time to preserve all their flavors.

Awarded many times for his art, the title of Triple World Champion established Francis as an unparalleled jam maker.

A confectioner by trade and passionate about "Sweet Arts", he diversified his productions, surrounded himself with a team of chocolatiers and thus created the artisanal confectionery bearing the sweet name of "Gourmet Fairyland".
Trained in the purest French tradition at the Lenôtre school, Francis is keen to pass on to his teams the respect for French know-how and the pursuit of excellence and taste that he was previously taught. In 1998, he launched the famous Coucougnettes du Vert Galant with SG Sender (Gaston Lenôtre's "Mr. Pastry Chef").
Their success was such that a range of sweets and chocolates followed, seasoned with cheeky humor, which made Francis Miot "the rascal of gourmandise"!

An insatiable creator, Francis also passed on this desire to innovate in his recipes to both the Jam Factory and Confectionery teams.
