It is in the small village of Lacaune, perched at an altitude of 800m, that we process local pork, raised in the Tarn and Aveyron and then slaughtered at the municipal slaughterhouse located 3 km from the farm. Our cured meats are cured in the open air, taking advantage of the sea and mountain winds that engulf the natural dryer.
