With only 1007 numbered bottles, Whiskey ASSEMBLAGE unveils Collection N°2.01. This French Single Malt uses the same aromatic profile as its predecessor, Collection N°2, however we have selected new barrels: an ex-barrel of Sémillon from Château Doisy-Daëne (Sauternes) and an ex-barrel of Sauvignon from Clos Floridène (Graves). It is now available for pre-order and will be available for delivery from early November. Story ASSEMBLAGE whiskey is the result of the collaboration between Aymeric oenologist, father of French whiskeys A. Roborel de Climens, and Cedrik founder of Maison Mounicq specialized in the development of spirits made from grapes: Vodka Nadé and Gins Avem . The two Bordelais have combined their know-how to design a whiskey imbued with their common passion for the vine. ​Aymeric has selected the best eaux-de-vie from the Hepp Artisanal Distillery, then refined them in barrels of wines from Bordeaux Châteaux. ​Cedrik, after selecting two of them, was once again inspired by his roots as a winegrower in order to marry them perfectly as one would blend a wine. Aromatic profile Collection N°2.01, comes only from the Hepp Distillery, so it is a single malt which is distilled exclusively from the fermentation of malted barley. Aging for 3 years in French oak barrels from Limousin brings depth and a more woody side to the whisky. Refining in 2 old barrels of Bordeaux wines, allows ASSEMBLAGE Collection N°2.01 to reveal the subtle flavors of the different grape varieties: The Sémillon cask from Château Doisy-Daëne (Sauternes) gives it floral nuances of acacia to which are added bitter and astringent flavors. As for the barrel of Sauvignon from Clos Floridène (Graves), it brings a nice citrus nose followed by exotic notes with aromas of ginger and mango, accompanied by floral flavors and honeysuckle.
