The unglazed interior absorbs moisture, draws moisture from the surface of the bread dough, and provides a crispier crust. The base features raised areas that act as ventilation holes to allow for better heat circulation when placed on a baking sheet in the oven. The steep sides also ensure optimal heat distribution for even baking. Measuring 34cm long x 15cm wide x 8cm high, the loaf pan is generously sized for family loaves of 2 pounds (900 grams) or more.
