Heather honey comes from the nectar of the heather Erica australis, Erica umbelata and Erica arborea, which bloom between March and May on some slopes in the most inland area of southwestern Asturias. This type of honey is very aromatic, strong and with a very characteristic flavor. In the flowering season of the heather the climate is still unstable, which causes the harvests to be irregular from one year to the next. It has an amber color with reddish tones, an intense and persistent aroma and a sweet taste accompanied by a bitter component and certain salty notes. Its production area is located in montane scrublands in the southwestern area of Asturias: Allande, Tineo, Cangas del Narcea and Ibias.
