Organic Bourdaine honey - 250g

Our organic buckthorn honey is harvested in the heart of the Millevaches Natural Park in Limousin at 750m altitude. It is very aromatic and fruity, without acidity or bitterness and slightly balsamic. Buckthorn honey is a rare vintage because it is not harvested everywhere in France during a very short period between the end of May and the beginning of June. Buckthorn honey is very weakly acidic, even close to neutral, unlike the vast majority of honeys. This almost neutral pH of buckthorn honey generates an extraordinarily slow fermentation, resulting in very fine crystallization and perfectly balanced granulation. Buckthorn is a shrub specific to the Limousine region which somewhat resembles a hazel tree. It grows mainly in humid environments, which is why it is mainly found on the Atlantic coast.
