This fruity red pepper or red ripened pepper comes from Kampot, Cambodia. Since there is only a slight difference between ripe and overripe berries, the red berries are selected and picked by hand. Because the oils in the berries have had time to fully develop, this red pepper is a true flavour bomb. You taste not only the intense heat, but also a unique sweet and fruity touch. Red pepper is used like black pepper, but it comes out especially well in dishes with a fruity sweet flavour. Think, for instance, of desserts and cream-based sauces.
