Homemade organic large formats

Organic caserecce from Pastificio Testa made from 100% durum wheat semolina originating in Italy.   Semolina and water are the only ingredients.   We use circular bronze dies and dry the pasta in static cells at low temperatures with long times. Large formats dedicated to catering.
