It all started with the search for the perfect bread.
A bread that can do it all: lots of protein, fewer carbohydrates, plenty of fiber – exactly what a balanced diet should look like. And it's gluten-free too, and baked in no time!
I spent a long time tinkering with different mixtures. Healthy? Yes, they certainly were. Yummy? Νο. Something was missing.
Then I read an article about Hildegard von Bingen. The abbess praised chestnut flour highly – it was absolutely good for human health, a true miracle cure for the body!
Chestnut flour? I had never heard of it before. But I tried it. And voilà! My almost perfect bread not only got an extra portion of nutrients, but it also got an incredibly good aroma.
I've been in love ever since. I dealt with the topic of the sweet chestnut and as a Dipl. As a sports scientist and nutrition coach, I am still fascinated by this super nut.
