○ Latin name: Theobroma cacao Cacao is a small tropical tree native to regions of Central and South America. Its scientific name is Theobroma cacao, which means "food of the gods" in Greek. The cocoa tree produces oblong-shaped pods that measure about 20 centimeters in length and contain between 20 and 50 cocoa seeds, also called cocoa beans. The beans are covered in a white, sweet pulp that is eaten in some cultures. Cocoa butter is an edible fat extracted from cocoa beans. ֍ An interesting anecdote about cocoa concerns its use as currency in the ancient civilizations of Central and South America. The Aztecs, for example, used cocoa beans as currency to purchase goods and services. The Aztecs also considered cocoa to be a sacred drink, often reserved for the elite and used during religious ceremonies. The drink was prepared by mixing the roasted cocoa nibs with water and adding corn, spices and honey to it. During the Spanish conquest of the Americas, the conquistadors discovered cocoa and brought it to Europe, where it quickly gained popularity. Europeans added sugar and milk to the cocoa drink, creating the first form of hot chocolate.
