It is a herbaceous plant with long stems and large compound leaves. It produces an underground tuber which is the edible part of the plant. The tuber is made up mainly of soluble fiber, including glucomannan, which is a highly absorbent dietary fiber. Konjac produces a characteristic spadix-shaped inflorescence. The spadix is surrounded by a spathe, a leaf-like bract that resembles an envelope. Konjac flowers are small and usually inconspicuous, greenish-white to purple in color. They are grouped together on the spadix and are pollinated by insects.
