A specialty of eastern France, the wild boar gendarme is a sausage marinated in Pinot Noir and cumin, then pressed and smoked over beech wood. Fresh it keeps a smooth and tartar side, then after a few days of drying its aromas are concentrated to express all the power of the wild boar. It can be eaten all year round, as an aperitif, in an omelet or even in a salad! 100% wild game. Vacuum packed per bag of 5 gendarmes.
