Its scent symbolizes the Christmas holidays, the scent of mulled wine at the foot of the ski slopes, speculoos cookies or even cinnamon rolls. The spice is made from cinnamon bark. It is obtained by cutting a square of bark from this tree which, after drying and aging, bends to form a tube. There are also two main families of cinnamon. The so-called “Chinese” cinnamon, also called Casse cinnamon, from its Latin name cinnamon cassia, is the most common. It is also found in Indonesia, Vietnam or India. Its rind is thick and very fragrant, its taste is rustic and intense. It is the most common in commerce.
