For hard cheeses: we have created a sweet sauce that is reminiscent of baked apples, that does not fall short with a mature cheese but does not hide the faint aromas of young cheese. To accompany these cheeses in the mouth, we have caramelized the diced apple and are accompanied by refined tender pistachios from Turkey and the ethereal aroma of cinnamon from Sri Lanka.
