Organic tea by the kilo - Pai Mu Tan Premium Organic White Tea The leaves are picked by hand and collected from large trees between March 15 and April 10, if it has not rained and the leaves are dry. We generally harvest the terminal, downy bud, with the first two young shoots, with large leaves. No pink buds are allowed in the harvest and the shoots must be neither too long nor too short. Partially opened leaves or those damaged by wind, handling or insects are rejected and used for a subclass. The best Bai Mu Dan is produced using the ratio of two leaves to one bud and is naturally or mechanically dried to produce leaves that are neither black nor red but green in color.
