Spelled is a low-fat, high-protein cereal belonging to the grass family, ideal for those who follow low-calorie diets or want the right amount of energy before sports. Oltresole pearled spelled grains are produced in Italy from organic cultivation. Pearled spelled differs from raw spelled due to the absence of the outer skin and for a simpler and faster cooking method but is still rich in fiber, mineral salts and vitamins. No need for soaking: just rinse it under running water to remove any residues and cook it in water (proportion: one part of cereal two parts of water) for about 30-40 minutes. After cooking it is recommended to wait ten minutes before seasoning it so that it absorbs the water well. It can also be steamed or toasted. Einkorn spelled (or small spelled) was in fact present in man's diet as early as the Neolithic. It is even mentioned in the Bible that it was so resistant that not even the plague of hail sent by God to punish the Egyptians was able to destroy a spelled crop. In ancient Rome it was used as pay for soldiers and was also indispensable during sacred weddings. The rite was called confarreatio and required the spouses to consecrate a spelled cake to Jupiter to ensure a happy union.
