Oltresole Lavender Honey is an Italian artisan product. The color is light yellow and crystallization is very rapid and with fine crystals that are very pleasant on the palate as they have a soft and creamy consistency. The most characteristic note is given by the perfume that recalls the lavender flower and with a very delicate flavor. This feature makes it immediately recognizable and highly appreciated by consumers. The most suitable area for the production of lavender honey is Provence where in the months of June and July entire fields of lavender spread an unmistakable scent into the air. It is much more difficult to find an Italian lavender honey like the one proposed by Oltresole since single-flowered crops have low yields and huge expanses of cultivated fields are needed to obtain good productions. The unmistakable scent and delicate aroma make this honey perfect to be savored naturally. Very popular is the combination with savory and aged cheeses such as Fiore Sardo or Montasio. PAIRING: Lavender honey has well-defined peculiarities. In its liquid form it has a color ranging from straw yellow to amber. However, this type of honey has a strong tendency to crystallization which occurs fairly quickly and leads to the formation of small and medium-sized crystals, also modifying their color (beige-white). The smell and taste are very particular described as quite intense with a floral and fruity aroma. It is often paired with fruit and cheeses, especially with Sardinian and Sicilian pecorino and with Montasio, all with an intense flavor. Another very important property is that linked to its antifungal activity, especially against the Candida krusei fungus, according to studies conducted by Spanish and Portuguese researchers. FUN FACT: the name lavender derives from the Latin and means to wash, alluding to its use since ancient times. The Romans used it abundantly in bath water for its deodorant, perfuming and disinfectant properties. Also for this reason, dried sprigs of lavender were burned inside the rooms to disinfect them while its flowers were placed in the water tanks that were located near the sacred temples as a symbol of purification. In Ancient Rome, lavender was the main ingredient of a well-known, very expensive perfume and for this reason it was used only by wealthy nobles and the only patricians who could afford to buy it.
