Amchoor - dried green mango

Commonly known as "Amchoor", it is a green mango cut into strips and dried in the sun before being reduced to powder. It is widely used in India. Its flavor is sweet, round and tangy. It can be used in place of lemon juice in dishes where you don't want to add liquid. Like the majority of citrus fruits, it does not really tolerate prolonged cooking at the risk of becoming slightly bitter.
