Andaliman bay belongs to the same family as Timut bay or Sansho bay. Its anesthetic sensation – typical of Zanthoxylum berries – is sweet and its citrus notes are enhanced by a subtle floral fragrance that makes it so special. Traditionally used as a pepper, it must be dosed sparingly. It sublimates freshwater fish, but also seafood. It also accompanies most meats and vegetables. You can use it in the mill or whole in your marinades, your oils, your vinaigrettes and your desserts whether they are fruity or chocolate.B
