A very mild coffee with a slight sweetness... The state of Minas Gerais, and in particular the "Sul de Minas" (South of Minas), has an ideal terroir to produce high-quality coffees, but it is thanks to the desire to improve their working methods that these farmers manage to obtain a specialty coffee. Hand-picked, the cherries are carefully sorted and then pulped to recover the coffee beans which will then be washed and dried for several weeks in the sun. These productions are in high demand and producers are often forced to put new customers on a waiting list for many months, or often even years.
