Green cardamom

Cardamom is a rhizomatous herb, like turmeric and ginger (among others). At the end of the stems, the cardamom flowers appear discreetly, then the fruits. Picked by hand, then dried in the sun, the fruits come in the form of a capsule that contains small very aromatic seeds. In Europe, its lemony and peppery notes perfectly flavor pastries. In India, it is essential and considered a queen spice. It enhances curries and accompanies many traditional Indian dishes. In Asian cuisine and African cuisine, it is also very common.
