Paprika is obtained from the ripe, dried and ground seed of the pepper. It is part of the pepper family, but its low capsaicin content gives it a very mild spiciness (1/10 on the Scoville scale). Its red color, with orange reflections, illuminates our dishes. Its slightly pungent and bitter flavor accompanies shellfish, meats, risottos and stews.
