Grown in Phu Quoc - the largest island in the Vietnamese archipelago - this rare pepper with a fruity flavor is one of the best peppers in the world. It will sublimate delicate dishes such as seafood and fish, but its use can be extended to most of your dishes. In Vietnam, it is pounded with sea salt and lime juice to serve as a condiment. Use it in the mill or crushed, and at the end of cooking or when dressing to avoid prolonged cooking.
