Green pepper is a pepper picked before its maturity. This comes from a protected nature reserve in the highlands of the Malabar coast. It enhances delicate fish, seafood, white meats and fresh cheeses. You can rehydrate it (approx. 30 minutes) in water, a base of sauce or cream to restore its fresh texture or simply use it in its dehydrated version in a mill.
