Annatto (or roucou) is the fruit extracted from the annatto tree, a shrub that grows mainly in Asia and in the tropical regions of Central America. It is highly prized as a natural coloring in cheeses, cold meats, fish, confectionery and even pastries. Also called “achiote” in Mexico, it is commonly used to prepare sauces and marinate meats in the Mexican style.
