Sumac gives a touch of acidity - as lemon or vinegar could do - to your fish as well as your pieces of lamb and beef. It also accompanies salads, especially when they are made with tomatoes or onions. It is also one of the three ingredients that make up zaathar, an aromatic spice blend very common in Lebanon.
