Spelled is the ancestor of wheat, as it was once eaten by the Gauls and traces of which can be found dating back eleven thousand years. It is a cereal that does not support any input of fertilizer, requires very little water and is of great nutritional richness. Rich in vitamins and minerals, wholemeal spelled flour produces bread that does not crumble. Replaces wheat flour advantageously, because contains less gluten, is used in the same way. Waffle batter: 500g flour, 2 eggs, 1 sachet of baker's yeast, 2 spoonfuls of honey, 20g walnuts, 40g currants, 20g hazelnuts, 75ml sunflower oil, 25ml walnut oil, 200ml vanilla rice milk. Mix and leave for 1h30. Bake in a waffle iron.
