Azukis can be taken as an accompaniment to cereals, vegetables, in salads, in soups, in mashed potatoes, as a dessert. This small red bean, with a very hard texture, is very popular in Asia and can be considered a real food-medicine. Like other dried beans, it is advisable to soak them overnight before cooking them.
