Rye contains less gluten than wheat, is rich in B1 vitamins and has a balanced amino acid composition. Wash 150g of rye in cold water. Toast it dry for 3 minutes in a little olive oil, then pour in 1 1/2 times its volume of salted boiling water. Cover and cook for 1 hour over low heat. You can add a few small vegetables during cooking.
