When we produce organic beer with local malts and very aromatic hops, we are easily tempted by distillation: all these good smells of hops can only be highlighted in a nice distillate. And when we age whiskeys we develop a certain ability to match the barrels with the eaux-de-vie. Here we chose a barrel of Chardonnay from a beautiful Burgundy estate. And here is the spirit of louche, a beer brandy aged for 18 months in chardonnay barrels.
