Pago de Espejo is the creation of the fourth generation of women olive growers of the Espejo family. In the 1920s, it was the grandmother of the current owner who promoted the purchase of the La Condesa farm, located in Villanueva de la Reina, Jaén. Since then, it has been the women who have helped in the field, in the collection or in some of the stages of elaboration of their extra virgin olive oil of the Picual variety. Over the years the farm prospered and the Espejo family bought the adjacent plots until they reached 200 hectares that they currently have.

In all these years the role of women in this family has been essential for the development of the entire harvest. From generation to generation, knowledge on olive care has been transmitted in order to obtain the highest quality extra virgin olive oil, which is also marketed in an attractive design. Red has always been the color that has represented Pago de Espejo, in allusion to his native Andalusia, the passion of his work and the magic or “duende” of the south.

The farm, located in Villanueva de la Reina, Jaén, has 200 hectares under the same boundary, becoming a payment or "" terroir "" that allows them to control the entire production process.
An excellent early harvest extra virgin olive oil, collected in early November and made with absolute delicacy. Its egg is the result of a meticulous process of collection and extraction, where it is ground in the hours after its collection, decanted by a natural process, to finally filter it, thus preserving its incomparable organoleptic properties.

On the nose, the oil presents an intense fruitiness of green olive, with very high notes of fresh grass, olive leaf, green almond and tomato memories.
In the mouth, the freshness of the grass and green fruits have a great appearance with a sweet entry and a slight final itch, due to the Picual variety.
