In terms of nutritional value and dry matter, goat's milk differs only slightly from cow's milk. Goat's milk contains more short and medium-chain fatty acids than cow's milk. These fatty acids are more easily assimilated by the body than long-chain fatty acids and are therefore easier to digest. In addition, the fat globules in goat's milk are smaller than those in cow's milk. The many small fat globules result in a larger total surface and thus a larger surface for enzymes to attack, which further improves digestibility.[1] It is also said that goat's milk is already "naturally homogenized". Homogenization (mechanical splitting of the fat globules) as with cow's milk is therefore not necessary with goat's milk from the point of view of digestibility.
