Bearface Series 02 - Mitlenach Island Canadian Whiskey

Inspired by the elements, flavors and changing seasons of wild Canada, Bearface presents the Wilderness Series. A collection that takes whisky to unexplored territories. The second edition of the Wilderness series ventures even further into the Canadian wilderness, to the crashing waves off Mitlenatch Island in the Pacific Northwest. Icy waters. Ancient forests. Spectacular shores. A landscape without concessions, just like Bearface whisky. It was here that the teams discovered maple-smoked sea salt – a salty, almost sweet flavour that inspired this unique blend. STAGE I: AGEING IN THE ELEMENTS: Carefully selected oak barrels are aged in repurposed containers, exposed to the elements of Canadian nature. The extreme climate amplifies the interaction between wood and whisky, transforming the liquid into a bolder and smoother nature. STEP II: EXTRA CHARRED WHITE BURGUNDY CASKS: Bearface Single Grain Canadian Whisky is aged in fully charred white burgundy casks (alligator-charred = level 4 out of 4), giving it varying levels of complex flavors. STEP III: MAPLE SMOKED SEA SALT REDUCTION: In the reduction step, the whiskey is reduced with distilled water from the maple smoked salt making process, where seawater from the Pacific Northwest is evaporated over maple wood fires. THE RESULT: A bold, smooth whisky with deep minerality, pronounced smoky notes and a sweet-savory finish. 42.5% alc/vol
