Glendalough - Wild Botanical Gin

Our gins are of a different quality, made from fresh and wild ingredients. Glendalough harvester Geraldine Kavanagh heads deep into the Wicklow Mountains to collect the necessary wild plants every day, always making sure to give nature time to regenerate. The wild plants she collects are native to this part of Ireland. Following her picking, Geraldine Kavanagh quickly transports her to the distillery to capture the intrinsic nature, the very essence of these mountains. The wild plants are carefully and slowly distilled to extract the delicate flavors, in small batches of less than 250 liters. The distillation times are decided batch by batch, using the smell and the taste, the head and the tail are cut according to these criteria and never in a timed or automatic way, as if it were to each time of the first batch. It takes the flavors to a whole new level. Knowledge, experience and the hours dedicated to crafting each bottle are the things that make this gin so special. Nose: Fresh notes of juniper, citrus, pine - a clearing in spring. Taste: Fresh and oily, summer flowers, wild autumn fruits, hot spices. Overall: Long and sylvan with warm winter spices.
