Verjus Léonce

Created by winegrowers Sabine and François Lurton, Leonce verjuice is French, organic and unfiltered.    At the time when lemon only arrived in France in very small quantities and was reserved for large tables, the verjuice was within everyone's reach. Verjus or “green juice” is juice from grapes harvested before maturity (green harvest). The goal is to eliminate certain clusters already formed in order to facilitate the ripening of those that will be kept. Some grapes are more suited than others to making verjuice, but few vines are now cultivated solely for this use. The organic Mourvèdre from Mas Janeil in Roussillon was the best candidate for making our verjuice. A plot was specially worked for its production. The grapes are picked there by hand in July.
