
Orecchiette are a type of pasta typical of the Puglia region, whose shape is approximately that of small ears, from which the name derives. Their size is, on average, about 3/4 of a thumb, and they appear as a small white dome, with the center thinner than the edge and with a rough surface. The "Senatore Cappelli" wheat, used in purity (100%), is called "the father of modern wheat". Born in 1915 in Foggia. Known for his height (approximately 150-160 cm).
