Our chickpeas are grown exclusively in Italy with traditional and organic methods respecting nature.   Using a mechanical process, the external integument (peel) is decorticated and removed, followed by breaking it.   They are a yellow legume with a delicate flavour.   Rich in proteins, starch, mineral salts and crude fibre.   They have a slightly higher fat content than other legumes and this helps to increase the energy value and gives them a softer texture.   They cook quickly and are more digestible than whole ones, which is why they are also suitable for children and the elderly.   Excellent for making tasty soups, creams and veloutés, alternatively they are ideal for hummus, summer salads, vegetable burgers and meatballs. ANDit is advisable to enjoy them with the sole addition of salt and Extra Virgin Olive Oil. No soaking / Cooking 50-60 minutes [pressure cooker 20' from the start of the whistle]
