The cultivation of grass peas began in ancient times, when they were commonly used in ancient Egypt to prepare bread, focaccia and soups.   Today, they are grown with traditional and organic methods, respecting nature, even in Italy.   All our legumes are grown in open fields by local farmers.   Belonging to the legume family, grass peas are rich in proteins and other useful nutrients such as B vitamins, vitamin PP, calcium, phosphorus and fibre.   Ideal for recipes based on soups and veloutés, purees and side dishes.   Furthermore, from the grass pea, we also obtain a flour which is the basis of many good and nutritious sweet and savory dishes. ANDIt is advisable to enjoy it with the addition of salt and extra virgin olive oil. Soaking 12-24 hours / Cooking 60-90 minutes [Prolonged soaking in water and careful boiling is required]
