Le Cabernet du Sonny - 2021 - Natural Wine - Organic Wine

This natural, dense ruby red wine is a unique cuvée, entirely vinified in our cellar in Courbevoie, using Cabernet Sauvignon grapes, from partner winegrowers south-west of Angers who work their vines organically. It is a powerful and woody red, the aromas evoke a porch in winter, where the aromas of the surrounding forest and the intoxicating smoke of the cigar transport us to an elegant evening. We sipped it with a Champagne-aged Langres, to a guitar solo from a California band from the late 70s. We get these grapes from the brilliant winegrowers, Elisabeth and Greg Nouteau, who work their vines organically. They come from a lovely plot of Cabernet Sauvignon. We harvest the grapes by hand and then put the crates in the refrigerated trucks. 4 hours on the road then arrived in Courbevoie we continue with the vinification. The grapes arrive at 8°C in the cellar. They are immediately scraped and crushed then pumped into a stainless steel tank. A cold maceration of 48 hours then the fermentation starts, we do daily pumping over for three weeks then we press the grapes and follow 12 months of aging in Burgundy oak barrels. We only use a very small dose of sulfur which remains within the levels of natural wines (15 mg/L in total SO2) Bottled in the cellar. Happiness in a bottle :) Natural Wine - Certified Organic Wine
