The Fiston's Cabernet 2022 Natural Wine

This natural red wine with a dense ruby color is a unique vintage, entirely vinified in our cellar in Courbevoie, from Cabernet Sauvignon grapes, from partner winegrowers southwest of Angers who work their vines organically. It is a powerful and woody red, the aromas evoke a porch in winter, where the aromas of the surrounding forest and the intoxicating smoke of the cigar transport us to an elegant evening. We sipped it with a Langres refined with Champagne, to a guitar solo from a Californian group dating from the late 70s. We go and get these grapes from the brilliant winegrowers, Elisabeth and Greg Nouteau, who work their vines organically. They come from a lovely plot of Cabernet Sauvignon. We harvest the grapes by hand and then put the crates in refrigerated trucks. 4 hours of driving then arriving in Courbevoie we continue with winemaking. The grapes arrive at 8°C in the cellar. They are immediately destemmed and crushed then pumped into a stainless steel tank. A cold maceration of 48 hours then fermentation begins, we do daily pumping over for five weeks then we press the grapes and 18 months of aging in Burgundy oak barrels follow. We only use a very small dose of sulfur that remains within the levels of natural wines (15 mg/L in total SO2) Bottled in the cellar. Happiness in a bottle :) Natural Wine - Certified Organic Wine
